The climate of cocktails in America is maturing. With more exotic ingredients, more international liquors, and progressive techniques no longer bound to hidden bars helmed by tweed vested, mustached men, we saw a rise in mezcal, ubiquitous sherry and amari for a growing wave of savory tipples. 2016 also brought a new focus on low-proof drinks built of these bottles and more.

FLORA STREET CAFÉ, DALLAS: ELOTES ($14)
Flora Street Café is restaurateur Stephan Pyles’ hot new addition to Dallas, and one that’s quickly earned high marks for more than its “sophisticated Texas” cuisine. Right off the bat, the eatery’s corny Elotes cocktail immediately stood out, made by bartender Lauren Festa who was looking to channel Mexican influences in her drinks. In this case, she blends smoked corn with charred poblano chili, red peppers, tequila and a lemongrass-kaffir-cardamom syrup. It’s like an elevated, drinkable version of Mexican street corn.
